You’ll need:
for the salad:
1/2lb. baby potatoes, halved
1 can great northern beans
1 tin sardines for each salad serving
1/4 cup fresh dill, chopped
1 red onion, thinly sliced
3 cups dark leafy greens
for the dressing:
1/2 cup extra virgin olive oil
1/4 cup apple cider vinegar
1/2 tbsp italian seasoning
1 tsp honey
salt and pepper, to taste
Bring a large pot of water to a boil, seasoning with salt. When the water boils, add the halved potatoes, cooking until fork tender, about 10-15 minutes
Drain and rinse the beans.
Prepare your salad by combining greens, onion, dill, and drained beans to a large bowl.
Make your dressing by mixing together olive oil, vinegar, honey, Italian seasoning, salt, and pepper to taste. Whisk or shake vigorously in a closed jar.
When the potatoes reach desired tenderness, remove from heat and strain boiling water, allowing the potatoes to cool slightly.
Add the cooled potatoes and dressing to your salad, tossing to coat. Top with sardines.
